Sounds interesting.  Wish I could be there.  Do they have REAL Texas chili, or just the wimpy kind made with chili peppers, ground meat and onions?

Some of the chili cook offs in TX get to be insane.  Some cooks try to make the chili as hot as they can get it.  There is a very small pepper that has the nick name of petter's pecker pepper ('cos it's just about the size of a new born baby's pecker and it's so hot it makes you think you've died and gone to hell and you are calling out for St Peter) grown in S TX which a lot of folks use.  WAY TOO HOT for me!  Personally, I go for flavor. 

SOme folks use venison, which is pretty good but kinda dry.  Others use pork or ground turkey (health nuts).   I even knew a guy that made some from 'possum.  That was fuckin NASTY!  Geasy as hell.
